Liams Brown Soda Bread

Prep Time 10 minutes
Cook Time 30 minutes

Ingredients
  

  • 250 grams Wholewheat Flour
  • 250 grams Plain Flour
  • 100 grams Porridge Oats
  • 40 grams butter
  • 1 pinch Salt
  • 1 teaspoon Baking Soda
  • 500 millilitres Buttermilk

Method
 

  1. Mix all the dry ingredients together

  2. Add buttermilk and mix together quickly
  3. Heat oven to 180C
  4. Bring together in a ball shape. Mark with a cross on the top using a long knife

  5. Bake in the preheated over for 30-35 minutes until tapping on the bottom of the loaf sounds hollow

Fail-Proof Pizza Dough

Ingredients
  

  • 1 cup Warm Water
  • 2.25 teaspoon Dried Yeast
  • 1 tbsp Honey
  • 2 teaspoon Salt
  • 2 tbsp Olive Oil
  • 3 cups Flour (00)

Method
 

  1. In a large mixing bowl, preferably that of a stand mixer, stir yeast and honey into warm water. Sit for 5-10 minutes or until bubbles form and mixture starts to foam.

  2. Pour in salt, oil and half the flour and mix. Once that flour is incorporated, start adding flour in bit by bit until you get the pizza dough to the consistency you want: slightly tacky, but when you touch it it doesn't stick to your hands.
  3. The dough should be smooth and easy to work with. And the bowl should be clean!

Classic Banana Bread Recipe

Banana Bread Recipe for Bread Making Machine

Ingredients
  

  • 8 Tablespoons Butter softened 113 grams
  • 2 Eggs lightly beaten
  • 1 Teaspoon Vanilla Extract
  • 3 Bananas Ripe
  • 1 Cup Light Brown Sugar
  • 2 Cups Flour
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Baking Soda
  • 1/2 Cup Chopped Walnuts or Mini Chocolate Chips optional

  • 1 Bread making Machine

Liam’s Fruit Scones

Ingredients
  

  • 350 g self-raising flour
  • 80 g butter
  • 1 teaspoon baking powder
  • 3 tablespoon caster sugar
  • 175 ml milk
  • 1 teaspoon vanilla extract
  • 150 g sultanas

Method
 

  1. Add all the dry ingredients together and mix
  2. Melt butter in microwave and add to the dry ingredients and mix
  3. Add in sultanas. Mix well

  4. Roll out and then cut to shape

  5. Bake in oven at 180c for approx. 15-20 minutes depending on the size of the scones you have shaped

Sarah’s Green Tomato Chutney

Prep Time 20 minutes
Cook Time 2 hours

Method
 

  1. 450 g green tomatoes (some red are good too)

  3. 75 g raisins (
  4. 3 tsp garlic salt
  5. 1/4 tsp cayenne pepper
  6. 1/4 tsp black pepper
  7. 2 tsp salt
  8. 250 g brown sugar
  9. 500 ml malt vinegar

Notes

Cut and slice the tomatoes and onions.

Place all ingredients into a medium sized pot.

Bring to a boil and stir.
Lower heat to a high simmer and reduce. Depending on your heat this can take anything from 1 hour to 2 hours.
